Mascarpone Bubble Tea

Wildly popular in Asia, where it’s available in a gazillion flavours, this fun and refreshing drink is a great discovery if you haven’t tried it yet.

Yields 4 - 6 servings
mascarpone bubble tea

Ingredients

  • 1/2 cup (125 mL) tapioca pearls your choice*
  • 2 tbsp (30 mL) honey
  • 1/3 cup (80 mL) Canadian Mascarpone
  • 1 1/2 cups (375 mL) green tea or black tea infused and chilled
  • 2 cups (500 mL) cranberry juince or raspberry juice
  • 1 cup (250 mL) Milk

Preparation

Cook tapioca in water according to package instructions, or until tender. Rinse under cold water, drain and reserve.

In a large bowl, mix honey and Mascarpone with a whisk. Gradually add tea, juice and milk.

Divide tapioca pearls and some ice cubes among tall glasses and top up with Mascarpone mixture.

Tips

Tapioca pearls come in a variety of flavours. Choose the variety you like and buy straws that are wide enough to allow the pearls to pass through so you can really enjoy your bubble tea.

Cheese alternative: Canadian Cream Cheese.
