Mom’s Homemade Banana Bread
This banana bread holds a special place in our family, having nourished generation after generation. Made from simple ingredients, it was created by my mom as a snack for my brother and I when we were younger, and it has become a beloved go-to for my kids and grandkids. – Laura H., MB

Ingredients
- 2 ½ cups (625 mL) all-purpose flour
- 1 tbsp (15 mL) baking powder
- ½ tsp (2 mL) salt
- 3 very ripe bananas, mashed
- 1 egg, beaten
- ½ cup (125 mL) Canadian milk or Canadian plain yogurt
- 1/3 cup (75 mL) Canadian butter, softened
- 1 cup (250 mL) granulated sugar

Preparation
Preheat oven to 350°F (180°C). Grease a 9 by 5-inch (23 by 12.5 cm) loaf pan and line with parchment, with paper overhanging edges.
In medium bowl, whisk together flour, baking powder and salt.
In large bowl, stir together bananas, egg, milk, butter and sugar. Stir in flour mixture until incorporated, being careful not to overmix. Transfer to prepared pan and smooth top.
Bake for 45 to 55 minutes or until a knife comes out clean.
Tips
Add ½ cup (125 mL) quick-cooking rolled oats and/or 1 cup (250 mL) chocolate chips, if desired. The chocolate chips addition makes a simply splendid banana bread.
