Eggs Florentine

Ingredients
- 10 oz (300 g) frozen spinach
- 1 cup (250 mL) 35 % cream
- 1 tsp (5 mL) instant vegetable broth mix diluted in 2 tsp (10 mL) water
- 8 eggs

Preparation
Preheat oven to 400 °F (200 °C).
Cook spinach according to cooking instructions on package. Drain well using a strainer and place in bowl.
In other bowl, mix cream and diluted broth. Fold 2/3 cup (160 mL) flavoured cream into cooked spinach. Mix well.
Divide spinach mixture among 4 individual baking dishes. Break two eggs over each dish and pour remaining flavoured cream over eggs, around the yolks. Bake for 15 to 20 minutes or until egg whites are done. Serve immediately.
