Strawberry and Pear Quesadillas

This is the Strawberry and Pear Quesadillas recipe.

Ingredients

  • 4 eggs
  • 1/4 cup (60 mL) Milk
  • Butter
  • 2 pears trimmed and cut in cubes
  • 1 cup (250 mL) strawberries hulled and sliced
  • Canola oil
  • 4 large 8-inch (20 cm) tortillas
  • 1 cup (250 mL) grated Mild Canadian Cheddar cheese
  • Yogurt and Lemon Sweet Sauce
  • 1 cup (250 mL) plain yogurt
  • 1/2 tsp (10 mL) almond extract
  • 1 tbsp (15 mL) lemon juice
  • 3 tbsp (45 mL) icing sugar

Preparation

In bowl, whisk eggs with milk.

In skillet, heat butter over medium heat and cook egg mixture for 3 minutes, stirring occasionally. Pour in bowl and stir in pear and strawberries. Reserve few fruit pieces for garnish.

In large non-stick skillet, heat small amount of oil over medium heat. Place 1 tortilla in skillet and sprinkle with 1-quarter of Mild Canadian Cheddar cheese. Top with half the scrambled egg mixture and sprinkle again with 1-quarter of cheese. Top with other tortilla. Cook for 2 to 3 minutes or until crisp. Gently turn over and cook for another 2 minutes.

Remove from skillet and keep warm. Repeat process with remaining tortillas, cheese and egg mixture.

Cut each quesadilla in 4 slices and serve 2 slices per person. Serve with Yogurt and Lemon Sweet Sauce. Garnish with fresh mint leaves and reserved fruit pieces. Serve with red grapes.

Yogurt and Lemon Sweet Sauce:

In bowl, mix all ingredients until smooth. Set aside.
