Belgian Smoked Turkey Salad with Pistachio and Apples

Ingredients
- 1 lb (450 g) sliced smoked turkey breast
- 1/4 cup (60 mL) butter
- 1 garlic clove finely chopped
- 4 green onions chopped
- 2 Belgian endives
- 2 apples trimmed and cut into thin strips
- 1/3 cup (80 mL) pistachios
- 1/4 cup (60 mL) olive oil
- 2 tbsp (30 mL) choice of fruit vinegar
- Salt and pepper to taste

Preparation
Cut smoked turkey breast slices into strips.
In skillet, sauté turkey strips, garlic and green onions in butter over medium heat for 3 minutes. Remove from heat and set aside.
Arrange endive leaves and apple strips in 4 large plates. Spoon smoked turkey mixture in centre of each plate and top with pistachios. Sprinkle with olive oil and flavoured vinegar. Season to taste with salt and pepper. Let stand for 30 minutes before serving, if possible.
