This is the Cherry Tomatoes with Trio of Cheeses and Pesto recipe.

- 8 oz (250 g) cherry tomatoes halved
- 2 1/2 oz (75 g) Canadian Mozzarella diced
- 2 1/2 oz (75 g) medium-strong Canadian Cheddar diced
- 2 1/2 oz (75 g) Canadian Feta crumbled
- 2 shallots finely chopped
- 3 tbsp (45 mL) pesto
- 1/3 cup (80 mL) olive oil
- 1/4 cup (60 mL) lemon juice
- Salt and pepper to taste
Place cherry tomatoes, cheeses and shallots in a salad bowl. Toss gently.
Whisk together vinaigrette ingredients and mix into salad as desired.
Toss gently. Adjust seasoning.
