Crispy Toffee Treats

Ingredients
- 1/2 cup (125 mL) butter
- 80 large marshmallows
- 10 cups (2.5 L) crispy rice cereal
- 7 1/2 oz (225 g) package toffee bits
- Wooden skewers or craft sticks
- 1/4 cup (60 mL) semi-sweet chocolate chips melted

Preparation
Place butter in a very large mixing bowl. Microwave on high (100 %) for 1-1/2 minutes or until melted. Add marshmallows and stir to coat with butter. Microwave on high for 3 minutes,stirring after every minute.
Stir in cereal and toffee bits until well coated. Transfer mixture to a foil-lined and buttered 15 x 10- inch (38 x 25 cm) baking pan with sides. With buttered hands or spatula, press mixture evenly into pan. Chill until firm.
Remove cereal mixture from pan and peel off foil. Cut out with assorted holiday cookie cutters. Insert skewer into each shape. Drizzle with melted chocolate, if desired.
Tips
Variations: Decrease crisp rice cereal to 9 cups (2.25 L), omit toffee bits and substitute a 6 oz (170 g) package of sweetened dried cranberries, chopped. Proceed as above. Cut mixture into 48 bars and roll into logs or cut into 16 squares and roll into balls. Wrap each and tie with ribbon.
Stir 1/3 cup (80 mL) peanut butter into marshmallow mixture until smoothly melted. Proceed as above.
