Sautéed Marinated Pork with Zucchini Balls

Ingredients
- 1 lb (450 g) trimmed and cubed pork (3/4 in /1.75 cm)
- 1/3 cup (80 mL) spicy Diana sauce or barbecue sauce
- 2 tbsp (30 mL) Worcestershire sauce
- 3 tbsp (45 mL) butter*
- 1 onion chopped
- 2 tomatoes diced
- 1 clove garlic finely chopped
- 4 zucchinis
- 3 tbsp (45 mL) butter
- 1 tbsp (15 mL) cumin seeds
- 1 tbsp (15 mL) chopped basil leaves
- Fresh parsley or basil to taste (optional)

Preparation
Marinate pork cubes in Diana sauce or in the commercial barbecue sauce and Worcestershire sauce for 15 to 20 minutes, stirring occasionally.
Heat 3 tbsp (45 mL) of butter and cook chopped onions, then add marinated pork cubes. Cook for 3 to 4 minutes. Add diced tomatoes and chopped garlic, then cover and cook for 5 minutes.
Using a melon baller, scoop zucchini pulp into balls.
Heat 3 tbsp (45 mL) butter and cook zucchini balls for 3 to 4 minutes. Add cumin seeds and chopped basil leaves. Cook for 2 minutes. Add zucchini balls to pork mixture, reheat for 3 to 4 minutes over very low heat and serve immediately.
Sprinkle dish with fresh parsley or additional fresh basil, to taste.

*Butter is used twice in this recipe.
