- 1/4 cup (60 mL) Canadian Cheddar or Tex-Mex blend shredded
- 1/2 cup (125 mL) combination of red or green bell pepper
- 1/2 cup (125 mL) finely chopped onion
- 2 tsp (10 mL) salsa
- 1 large soft whole wheat tortilla

Stir all ingredients together in a bowl. Spoon mixture along center of tortilla. Roll, or fold sides over center. Place filled tortilla on a microwave safe plate. Cook on high about 1 to 1 1/2 minute—until egg is cooked and cheese is melted.
