Sinful Berry Crêpes

Ingredients

  • 3 eggs
  • 1 1/2 cups (375 mL) Milk
  • 1 tbsp (15 mL) President's Choice Normandy Style butter melted
  • 1 tbsp (15 mL) sugar
  • 1 tsp (5 mL) vanilla extract
  • 3/4 cup (180 mL) all-purpose flour
  • 20 oz (600 g) 1 pkg of President's Choice 6-Berry Frozen Fruit Blend or 3 cups (750 mL) fresh fruits: strawberries, raspberries, blueberries, figs, grapes
  • Filling
  • 8 oz (250 g) Canadian Ricotta cheese
  • 8 oz (250 g) Canadian Cream cheese
  • 1 tsp (5 mL) vanilla extract
  • 2 to 4 tbsp (30 to 60 mL) icing sugar to taste
  • 1/4 cup (60 mL) Milk
  • 1 tsp (5 mL) finely grated lemon rind

Preparation

With mixer, beat eggs, milk, melted butter, sugar and vanilla extract. Add flour and mix well. Refrigerate batter for 30 minutes.

Lightly butter an 8 inch (20 cm) nonstick skillet. Cook crêpes (3,4 minutes on each side) using 3 tbsp (45 mL) of batter at a time. Separate crêpes with wax paper.

Spread about 2 tbsp (30 mL) of filling on each crêpe. Place 1 row of fruit at one end of crêpe and roll. Garnish with berry coulis if you want.

Filling

In blender or with electric mixer, mix all ingredients well.
