Crispy Rice Cereal Cookies

Ingredients
- 1/2 cup (125 mL) softened butter
- 1 cup (250 mL) sugar
- 1 egg beaten
- 2 tsp (10 mL) vanilla extract
- 2/3 cup (160 mL) all-purpose flour
- 2/3 cup (160 mL) whole wheat flour
- of salt
- 2 1/2 cups (625 mL) roasted rice cereal
- 2/3 cup (160 mL) chocolate chips
- 1/2 cup (125 mL) coarsely chopped nuts

Preparation
Preheat oven to 350 °F (180 °C).
In bowl, whip together butter and sugar. Blend in egg and vanilla extract. Mix well. Gradually stir in both flours and salt. Stir in remaining ingredients, stirring gently.
Drop mixture by spoonfuls onto buttered cookie sheet. Bake for 10 to 12 minutes. Repeat with remaining dough. Let cool for a few minutes before serving.
