Double Chocolate Muffins

Ingredients

  • 2 cups (500 mL) all-purpose flour
  • 1/3 cup (80 mL) sweetened chocolate powder ('Quick' style)
  • 1/2 cup (125 mL) sugar
  • 1 tbsp (15 mL) baking powder
  • 1 1/3 cup (330 mL) chocolate chips
  • of salt
  • 2 eggs beaten
  • 1 cup (250 mL) Milk
  • 1/4 cup (60 mL) vegetable oil

Preparation

Preheat oven to 375 °F (190 °C). Lightly butter or spray 12-cup non-stick muffin pan.

In bowl, combine flour, chocolate powder, sugar, baking powder, chocolate chips and salt. Set aside.

In large bowl, whisk together egg, milk and oil. Gradually stir dry ingredients into egg mixture. Stir just enough to moisten. Spoon batter into muffin cups, filling each 2/3 full.

Bake for 20 minutes or until toothpick inserted in centre comes out clean. Let cool for 10 minutes before removing from cups. Serve.
