Mediterranean Chicken with Pine Nuts

Ingredients
- 4 chicken thighs with skin
- 4 chicken drumsticks with skin
- Salt and pepper to taste
- Few pinches of paprika
- 4 oz (125 g) sliced ham cut into thin strips
- 1/3 cup + 1 tbsp (90 mL) olive oil
- 2 tbsp (30 mL) butter
- 1 onion sliced
- 2 green bell pepper cut into strips
- 4 garlic cloves finely chopped
- 4 firm tomatoes diced
- 1 tsp (5 mL) dried oregano
- 2 bay leaves
- 1 tsp (5 mL) ground thyme
- 1/2 cup (125 mL) white wine or chicken broth
- 1/3 cup (80 mL) sliced pitted Greek black olives
- 1/2 cup (125 mL) toasted pine nuts

Preparation
Season chicken pieces to taste with salt, pepper and paprika.
In large saucepan or casserole, cook chicken in oil and butter for 3 to 4 minutes on each side until golden. 2 minutes before chicken is done, stir in ham. Set aside.
In skillet, sauté onion, pepper, garlic and tomatoes in remaining oil for 4 minutes while stirring. Stir in oregano, bay leaves and thyme. Remove from heat and reserve.
Stir white wine, or chicken broth, into saucepan with reserved chicken. Add reserved vegetable mixture and olives, stirring gently. Correct seasoning. Bring to boil. Reduce heat, cover and simmer over low heat for 30 minutes. Remove from heat.
Serve 2 chicken pieces per person with fresh pasta and cooked vegetables. Garnish with toasted pine nuts.
