Ingredients

  • 1 lb (450 g) skinless boneless chicken breast
  • 1 tbsp (15 mL) curry powder
  • 2 tbsp (30 mL) olive oil
  • 2 tbsp (30 mL) butter
  • 1/4 cup (60 mL) fresh orange juice
  • 2 cups (500 mL) mache lettuce (lamb's lettuce)
  • 16 peeled orange segments cut in 2
  • 2 cups (500 mL) diced avocado flesh
  • 1/4 cup (60 mL) olive oil

Preparation

Sprinkle chicken breast with curry powder. In skillet, sauté chicken in oil and butter for 5 to 6 minutes on each side. Slice chicken breasts crosswise and set aside. Pour orange juice in skillet, scraping bottom with a spatula.

Arrange mache leaves in serving plates. Top with orange segments, avocado and chicken slices. Sprinkle with reserved juice and olive oil. Garnish with fresh herbs and serve with pita bread.
