Baked Stuffed Apples
This is the Baked Stuffed Apples recipe.

Ingredients
- 4 large apples
- 1/2 cup (125 mL) brown sugar
- 1/3 cup (80 mL) butter softened
- Zest and juice of 1/2 orange
- 1/4 tsp (1 mL) ground cinnamon
- 2 tbsp (30 mL) crushed almond cookies or amaretti
- 1/2 cup (125 mL) chopped pecans
- 1/2 cup (125 mL) dried cherries or other berries
- 8 oz (240 g) Canadian Gouda*
- Marmalade or quince jelly

Preparation
Preheat oven to 350 °F (180 °C).
Wash and dry apples; remove cores and make the core cavity bigger by 'shaving' out more space with the apple-corer. Score each apple around the middle (equator) with a sharp knife. Stand apples in a lightly buttered baking dish.
Mix sugar, butter, orange zest, juice, cinnamon and crushed cookies. Blend well. Stir in nuts and fruit.
Divide filling among the apples, piling it high. Shield the filling in each apple with small piece of aluminum foil.
Bake 50 to 60 minutes until apples are tender. Remove aluminum foil. Serve warm or at room temperature, with slabs of marmalade (or dollops of conventional quince jelly) and wedges of Canadian Gouda cheese on the side.
Tips
*For a change of taste, try with Canadian Cheddar cheese.
