Pumpkin Pie with Maple Whipped Cream

If you thought the spicy, creamy experience of a Pumpkin Spice latte could only be enjoyed in hot-drink form, this easy dessert recipe will change your mind in the most delicious way. Sure, pumpkins look great on your doorstep, but Fall is also the best season to appreciate all sorts of pumpkin desserts, starting with this flavourful Pumpkin Spice-inspired pie made with Canadian sweetened condensed milk mixed with real pumpkin puree, and just the right amount of spice.

And if you like your coffee chain Pumpkin Spice latte topped with whipped cream, you’ll love this: this Pumpkin Pie is served top with a cloud of homemade whipped cream made with Canadian whipping cream, mixed with maple syrup and powdered with cinnamon, for even more flavour.

Pumpkin Pie with Maple Whipped Cream

Ingredients

  • 1 pie crust, homemade or store-bought
  • Filling
  • 500 mL (2 cups) pumpkin puree
  • 300 mL (10 oz) sweetened condensed Canadian milk
  • 45 mL (3 tbsp) cornstarch
  • 3 eggs
  • 10 mL (2 tsp) cinnamon
  • 5 mL (1 tsp) ground ginger
  • 2.5 mL (1/2 tsp) ground nutmeg
  • Egg wash for pie crust
  • 1 egg yolk
  • 5 mL (1 tsp) Canadian milk
  • Maple Whipped Cream
  • 250 mL (1 cup) Canadian whipping cream (35%)
  • 60 mL (1/4 cup) powdered sugar
  • 30 mL (2 tbsp) maple syrup
  • Decoration (optional)
  • Pinch of cinnamon

Preparation

Preheat oven to 175ºC (375ºF). On a floured work surface, roll out the dough and place it in a 22 cm (9-inch) pie pan. Set aside.

In a bowl, mix all filling ingredients until smooth.

Pour the filling onto the crust. In a bowl, combine egg yolk and the milk, and brush this mixture around the edge of the pie crust. Bake for 45-50 minutes.

In a bowl, using an electric mixer, whip the whipping cream until stiff peaks form. Add the granulated sugar and maple syrup and whisk lightly.

When the pie has cooled down, top with maple whipped cream, and a pinch of cinnamon if desired.
