Ingredients
- 1 onion, diced
- 2 celery stalks, diced
- 250 g (½ lb) chicken breast, cubed
- 30 ml (2 tbsp) Canadian butter
- 1 can of 354 ml evaporated Canadian milk
- 75 ml (⅓ cup) all-purpose flour
- 1 L (4 cups) no-salt-added chicken broth
- 2.5 ml (½ tsp) salt
- 1 package of 227 g white mushrooms, sliced
- Optional garnish: bacon, Canadian Parmesan, grated Canadian cheddar, cream, etc.

Preparation
In a large pot, melt the butter over medium-high heat. Add the onion, celery, mushrooms, and chicken. Cook for 5 minutes, stirring occasionally.
Meanwhile, pour the evaporated milk into a measuring cup. Add the flour and whisk until fully incorporated.
Pour the milk and flour mixture into the pot. Add the broth and salt. Bring to a boil over high heat, then reduce to medium-low and simmer for 15 minutes.
Serve.
