Almond Garlic Pasta

You'll be amazed at how light yet highly satisfying this recipe pasta is! A creamy, cheesy sauce with almonds and garlic, what a delight! A daring combination to try as soon as possible.

Almond Garlic Pasta


  • 450 g (16 oz) of your favourite pasta
  • 3 medium full heads of garlic (skin on)
  • 473 ml (16 oz) Canadian 35% cooking cream
  • 1/2 cup (50 g) ground almonds
  • 1 cup (60 g) grated Canadian Parmesan cheese, plus extra as desired for garnish
  • Salt and pepper

Cook pasta according to package directions. Save a tablespoon (15 ml) of cooking water!

In the microwave, cook the garlic heads by placing them whole (with the skin) on a plate at maximum power in 30-second bursts. The garlic is cooked when the cloves have softened to the touch. Be careful, it's very hot!

Once the garlic has cooled enough to handle, squeeze out the cloves one by one and place them in the bowl with the powdered almonds.

Add the Parmesan, cream, salt and pepper.

Blend until smooth.

Add a tablespoon of pasta cooking water, while still hot.

Top with Parmesan cheese and fresh herbs to taste and serve!
