Apple Ring Pancakes

These Apple Ring Pancakes are perfect for hosting guests or treating yourself morning, noon or night. Made with butter, buttermilk and topped with whipped cream, you get delicious dairy made with high-quality Canadian milk.

APPLE RING PANCAKES

Ingredients

  • 3 large apples of your choice (Gala works well)
  • 3 tbsp (45 ml) Canadian butter (plus more for frying)
  • 2 cups (500 ml) all-purpose flour
  • ¼ cup (60 ml) sugar
  • 2 ½ tsp (13 ml) baking powder
  • ½ tsp (3 ml) baking soda
  • ½ tsp (3 ml) cinnamon
  • ½ tsp (3 ml) salt
  • 2 large eggs
  • 2 ½ cups (625 ml) Canadian buttermilk
  • 1 tsp (5 ml) vanilla
  • Canadian whipped cream (for topping)
  • Seasonal Fruit (for topping)

Preparation

Melt the Canadian butter in a saucepan or microwave and allow it to cool.

In a large bowl, combine all-purpose flour, sugar, baking powder, baking soda, cinnamon, and salt.

In a separate medium bowl, beat the eggs with a fork or hand mixer, then add the Canadian buttermilk, vanilla, and the melted Canadian butter.

Add the wet ingredients to the dry ingredients and stir just until mixed; avoid overmixing. The batter may still appear lumpy.

Core the apples using an apple corer. Cut each apple into ¼-inch thick slices maintaining the central hole.

Add Canadian butter to a griddle or a pan.

Dip each apple slice into the batter, ensuring to coat evenly.

Add the batter-dipped apple slices to the melted Canadian butter and cook until golden brown on each side.

Top your Apple Ring Pancakes with a generous serving of Canadian whipped cream and seasonal fruit!

Serve and enjoy!

Tips

If you don’t have buttermilk, you can substitute by adding 1 tablespoon of white vinegar or lemon juice per 1 cup of your favorite Canadian milk. Stir the mixture and allow it to rest for 5 minutes.
