Bacon and Cheese Soufflé
This is the Bacon and Cheese Soufflé recipe.

Ingredients
- 3 tbsp (45 mL) butter
- 2 tbsp (30 mL) all-purpose flour
- 1/2 tsp (2 mL) salt
- 1 cup (250 mL) Milk
- 1 cup (250 mL) grated Canadian Cheddar
- 3 eggs separated
- 1/4 cup (60 mL) bacon bits

Preparation
Pre-heat oven at 350 ºF (180 ºC).
Béchamel sauce:
Melt butter on medium heat in small saucepan. Add flour and salt, then add milk and stir until smooth. Add grated Canadian Cheddar cheese and stir until melted. Add egg yolks and bacon bits.
Beat egg whites in a bowl at high speed until peaks are formed. Gently fold the egg whites into the béchamel.
Pour the mixture into 4 buttered ramekins or in a soufflé dish. Bake for 7 to 8 minutes. Serve immediately.
