Baked Fish au Gratin

Ingredients

  • 13 oz (400 g) frozen cod or sole fillets or haddock
  • 2 tbsp (30 mL) butter
  • 2 tsp (10 mL) lemon juice
  • Salt to taste
  • Paprika
  • Hot cooked noodles or rice
  • 1 tbsp (15 mL) all-purpose flour
  • 1/4 tsp (1 mL) dry mustard
  • 3/4 cup (180 mL) Milk
  • 1 cup (250 mL) shredded Canadian Cheddar* cheese
  • 1 tbsp (15 mL) chopped fresh parsley
  • Salt and pepper to taste

Preparation

Preheat oven to 450 °F (230 °C).

Cut frozen fish crosswise into 4 pieces. Place fillets on large piece of foil, shiny side up. Dot fish with 1 tbsp (15 mL) of butter. Sprinkle with lemon juice, salt and paprika. Bring edges of foil together; fold to seal. Place on baking sheet. Bake 30 minutes or until fish flakes with fork. Drain fish, reserving 1/3 cup (80 mL) liquid in foil. Arrange cooked fish on noodles; keep warm.

In medium saucepan, melt remaining 1 tbsp (15 mL) butter. Blend in flour and mustard. Gradually stir in milk and reserved fish liquid. Cook and stir over medium heat until mixture boils and thickens. Remove from heat.

Add Canadian Cheddar cheese and stir until cheese is melted. Add parsley and salt and pepper to taste. To serve, pour sauce over fish and noodles.

Tips

* Or you can use shredded Canadian Colby or Gouda cheese.
