Baked Orange Custard with Chocolate and Grand Marnier Sauce

Ingredients

  • 4 oz (125 g) softened butter
  • 1/2 cup (125 mL) sugar
  • 2 large eggs beaten
  • 1 1/4 cup (310 mL) all-purpose flour
  • 1 tsp (5 mL) baking powder
  • 1/3 cup (80 mL) 15 % or 18 % cream
  • 1 tbsp (15 mL) grated orange zest
  • 2 tbsp (30 mL) fresh orange juice
  • 2 tbsp (30 mL) orange marmalade
  • 1 tsp (5 mL) vanilla extract
  • Chocolate and Grand Marnier Sauce
  • 1/4 cup (60 mL) butter
  • 8 oz (250 g) semisweet chocolate in chunks
  • 1 cup (250 mL) 35 % cream
  • 3 tbsp (45 mL) Grand Marnier liquor

Preparation

In large bowl, cream butter with sugar and stir in eggs. Set aside. Mix flour with baking powder and beat in butter mixture alternately with cream. Stir in remaining ingredients. Mix well.

Preheat oven to 325 °F (160 °C).

Pour mixture into a 5 to 6 cups (1.25 to 1.5 L) buttered ovenproof custard dish. Cover with foil and place in large baking pan. Pour water into pan to come halfway up the dish. Bake covered for 1 hour 20 minutes or until knife inserted in centre comes out clean.

Remove dish from pan and let stand 10 minutes before inverting on a serving platter. Top with Chocolate and Grand Marnier Sauce. Garnish with small chocolate chunks and grated orange rind. Wait 10 minutes before serving.

Chocolate and Grand Marnier Sauce:

In double boiler, heat all ingredients while stirring, until rich and smooth. Pour over your favourite desserts.
