Banana and Cocoa Frozen Sandwich
This is the Banana and Cocoa Frozen Sandwich recipe.

Ingredients
- 1/2 banana peeled
- 2 tsp (10 mL) cocoa powder
- 1/2 cup (125 mL) Canadian Ricotta
- 3 tbsp (45 mL) sugar
- 1/4 cup (60 mL) plain yogurt
- 2 tbsp (30 mL) Milk
- 16 chocolate cookies for ice cream sandwiches

Preparation
In a blender, process all ingredients, except the cookies, until blended together.
Place in freezer for about 1 hour or until mixture is sufficiently firm to form sandwiches.
Top 8 cookies with mixture. Cover with remaining 8 and return to freezer for about 1 hour. Enjoy!
Tips
As an alternative, substitute banana with 1/2 cup (125 ml) pineapple pieces and the cocoa with grilled coconut for a piña colada flavour.
If preparing the sandwiches in advance, take them out of the freezer a few minutes prior to serving to allow the filling to soften a bit.
Cheese alternatives: Canadian Cream Cheese, Mascarpone.
