Banana French Toast

Ingredients
- 2 cups (500 mL) Milk
- 5 eggs
- 1 ripe banana peeled and slices
- 2 tbsp (30 mL) liquid honey
- 1/4 cup (60 mL) frozen orange juice concentrate thawed
- 12 slices day-old bread
- Butter
- Orange segments or sliced bananas
- Maple syrup

Preparation
In a blender or food processor, blend milk, eggs, banana, honey and juice concentrate at high speed until smooth; set aside.
Arrange a single layer of bread in a large dish or stack bread 3 high in a smaller dish. Pour mixture over each slice of bread, turning slices over once. Cover and refrigerate for at least 3 hrs, but preferably overnight.
In a large fry pan, melt a small amount of butter over medium heat. Cook bread until golden on both sides, adding more butter to pan as needed. Serve with orange segments or sliced bananas and maple syrup.
