I got this recipe 30 years ago when a friend offered me her cabin for a weekend, complete with a waffle maker and her waffle and custard recipe. She suggested we stop at a nearby fruit stand for fresh blueberries to use as a topping. Every bite was full of rich dairy, fresh fruit and summertime feels. It was so delicious that I’ve been making this recipe on repeat ever since. – Kathy F., MB

Belgian Waffles and Vanilla Custard

Ingredients

  • Custard 
  • ¾ cup (175 mL) granulated sugar 
  • ½ cup (125 mL) all-purpose flour 
  • 2 ¾ cups (675 mL) Canadian milk, divided
  • 2 egg yolks 
  • ¼ cup (60 mL) Canadian butter 
  • 1 tsp (5 mL) vanilla extract 
  • Waffles
  • 2 1/2cups (625 mL) all-purpose flour
  • 2 tbsp (30 mL) baking powder 
  • 1 tsp (5 mL) salt
  • 4 eggs, separated 
  • 2 1/2cups (625 mL) Canadian milk 
  • 1/2cup (125 mL) Canadian butter, melted 
  • Nonstick cooking spray
  • Toppings (optional)
  • Fresh berries; sliced fresh peaches; Canadian whipped cream or Canadian ice cream

Preparation

Custard

In bowl, whisk together sugar and flour. Whisk in ¾ cup (175 mL) milk.

In saucepan over medium, stirring frequently, warm remaining milk until steamy. Whisk in flour mixture. Whisking, cook for 8 to 10 minutes or until smooth and thick.

Remove from heat. Whisk in egg yolks, butter and vanilla. Keep warm.

Waffles

Preheat waffle iron according to manufacturer instructions.

In bowl, whisk together flour, baking powder and salt. Using mixer, beat in egg yolks, milk and melted butter until smooth.

In another bowl, using clean beaters, beat egg whites on high speed until stiff. Fold into flour mixture.

Grease waffle iron with cooking spray. Scoop in 3/4cup (175 mL) waffle batter and cook for 3 to 5 minutes or until golden brown. Repeat with remaining batter.

Top waffles with custard. If desired, garnish with choice of toppings.

Tips

Leftover waffles can be refrigerated in an airtight container for up to 3 days. Reheat in toaster. Transfer leftover custard to a container, layer with plastic wrap directly on custard surface, and cover container; refrigerate for up to 3 days. Reheat over low heat.
