Ingredients
- 4 cups (1 L) graham cracker crumbs
- 2/3 cup (160 mL) butter melted
- 1/2 cup (125 mL) corn syrup
- 4 pouches (1/4 oz/7 g each) unflavoured gelatin
- 2 cups (500 mL) Milk
- 4 pkgs (8 oz/ 240 g each) light Canadian Cream cheese softened
- 2 cups (500 mL) sugar
- 2 tbsp (30 mL) vanilla extract
- 4 tsp (20 mL) finely grated lemon rind
- 3 cups (750 mL) frozen wild blueberries

Preparation
Brush bottom and sides of four 8-inch (20 cm) cake dishes with melted butter. Line bottoms with a circle of parchment paper.
In a bowl, combine crumbs, butter and corn syrup until blended; divide between pans and press evenly. Refrigerate while making filling.
In medium saucepan, sprinkle gelatin over milk; let stand for 3 minutes. Heat over low heat, stirring, until gelatin is dissolved. In a heavy-duty standing mixer, beat cream cheese and sugar until smooth, about 3 minutes. Beat in gelatin mixture, vanilla and lemon rind until smooth. Carefully stir in berries.
Divide filling mixture between pans. Spread even, cover and refrigerate for at least 1 hour or until firm.
Tips
Fresh wild blueberries can be substituted as can fresh or frozen raspberries or quartered fresh strawberries; the chilling time will increase to 2 hours with fresh berries.
Do not thaw frozen blueberries before adding, otherwise the colour will run.

Use a real vanilla bean in place of the extract for a more exotic touch. Slit the bean in half and scrape out the seeds. Add seeds to cream cheese mixture and simmer the pod with the milk; discard pod before adding milk to batter.
