Ingredients

  • 1/3 cup (80 mL) Arborio ( short-grain Italian) rice
  • 2 cups (500 mL) Milk
  • 3 tbsp (45 mL) sugar
  • 3 tbsp (45 mL) butter
  • Grated zest of 1 lemon
  • 1 tsp (5 mL) ground cinnamon

Preparation

Preheat the oven to 250° F (120 °C).

Mix the rice, milk, sugar, butter and lemon rind together in a bowl and pour the mixture into a buttered 8-cup (2 L) baking dish. Bake for 2 hrs.

Sprinkle with cinnamon and serve hot or cold.
