Ingredients
- 8 oz (240 g) sausage meat (any type)
- 2 tbsp (30 mL) butter
- 30 small tomatoes hollowed-out or large mushrooms
- 1 onion finely chopped
- 1 tsp (5 mL) dried oregano
- 1 tbsp (15 mL) finely chopped fresh parsley
- 3 tbsp (45 mL) all-purpose flour
- 1 2/3 cup (410 mL) Milk
- 2 tbsp (30 mL) vermouth
- 1/4 cup (60 mL) breadcrumbs
- Salt and pepper to taste

Preparation
Preheat oven to 400 °F (200 °C).
In skillet, sauté sausage meat and onion in butter. Drain and add spices. Stir in flour, milk and vermouth and season to taste. Cook for 10 minutes, while stirring.
Mix in breadcrumbs.
Stuff hollowed-out tomatoes with mixture and place on cookie sheet. Bake for 10 minutes.
Remove from oven and serve.
