Brown Sugar Boba Egg Tarts

The creamy tart and chewy pearls are a perfect combo for fall. These are everywhere in China and are the best treat as the weather cools down. It's a must-try!

Brown Sugar Boba Egg Tarts

Ingredients

  • 1 Egg
  • ¾ tbsp (11 ml) Sugar
  • 50 ml (3 tbsp + 1 tsp) Canadian Milk
  • 30 ml (2 tbsp) Canadian Whipping cream
  • 6 pre-made frozen tart shells
  • Brown sugar syrup (see Tips)

Preparation

Prepare the boba pearls as per directions on package and set them aside to cool while making the filling.

Whisk the egg, sugar, milk and cream together. Strain the mixture twice to get it smooth and let it rest for 10 minutes.

Assemble the tarts: Put a spoon of the boba pearls into the shells, then fill your tarts with the custard filling.

Pop them into a preheated oven at 380°F and bake for 25 minutes.

Once golden brown and fragrant, top them with some bouncy boba pearls and brown sugar syrup. And there you have it, a delicious Chinese Brown Sugar Boba Egg Tart.

Tips

To make Brown Sugar Syrup: Dissolve 1 cup (250 ml) of brown sugar in 1 cup (250 ml) of boiling water. Add 1/2 tbsp of vanilla. Simmer gently on stove top for about 10 minutes. Let cool.
