Preparation

Place a sieve or colander lined with cheesecloth or a clean kitchen towel over a bowl or in the sink. Pour the ricotta cheese into the lined sieve or colander. Let it sit for about 15-30 minutes to allow the excess liquid to drain. Using the cheesecloth or kitchen towel, squeeze out any remaining liquid. Set aside the drained ricotta.

In a medium mixing bowl, combine the ricotta cheese and cream cheese. Use a hand mixer to beat the mixture on medium-high speed for several minutes until smooth and creamy.

Add the sifted powdered sugar and vanilla extract to the cheese mixture. Beat until well combined and smooth.

Gently fold in all but two tablespoons of the mini chocolate chips.

Cover the mixture and refrigerate until ready to serve. It is best to let the dip chill for at least 1 hour, but it can be served in as little as 15 minutes if needed.

Just before serving, sprinkle the reserved chocolate chips over the dip.

Serve the dip with your desired dippers such as graham crackers, chocolate chip cookies, broken waffle cones, strawberries, or broken cannoli shells. Enjoy!
