Cheddar and Apple Stuffed Pork Chops

Tuck this Canadian Medium Cheddar stuffing into butterfly pork chops, grill stove-top in a cast-iron skillet and let melted cheese work its magic!

Ingredients

  • Stuffing
  • 1 shallot minced
  • 2 large apples peeled and grated
  • 1 1/2 cups (375 mL) Canadian Medium Cheddar cheese shredded
  • 1 1/2 tsp (7 mL) chopped fresh sage or 1/2 tsp (2 mL) dried sage
  • Salt and freshly ground pepper to taste

  • 4 pork chops butterfly cut
  • 1 tbsp (15 mL) butter melted
  • Salt and freshly ground pepper to taste

Preparation

Combine all stuffing ingredients and season to taste. Top half of each pork chop with 1/4 of the stuffing mixture. Fold the other half over the stuffing and secure with toothpicks.

Butter and pre-heat a ribbed cast-iron skillet to medium. Baste pork chops with melted butter, and season with salt and pepper. When oil is hot, place chops in skillet. Cover, reduce heat slightly and let cook for 5 to 7 minutes on each side, turning only once. Serve with grilled vegetables.

Tips

You could substitute a pear for the apple in your stuffing. Or try adding finely chopped walnuts, for texture and flavour.
