Cheddar sweet potato kebabs

Ingredients
- 1 medium sweet potato
- 1 leek
- 6 bacon strips cut in 4
- 1 tsp (5 mL) fresh rosemary chopped
- Salt and freshly ground pepper
- 7 oz (200) Canadian Aged Cheddar cubed

Preparation
Preheat oven to 400°F (200°C).
Cut sweet potato into cubes about 1˝ (2.5 cm) high by ½˝ (1 cm) wide. You should have 24 cubes. Slice the leek ¼˝ (0.5 cm) thick. You should have as many leek slices as sweet potato cubes.
Spread sweet potato, leek and bacon on a parchment-lined baking sheet. Garnish with rosemary and season with salt and pepper. Bake in the oven for 30 minutes, stirring a few times.
Once out of the oven, thread 1 potato cube, 1 Cheddarcube, 1 leek slice and one piece of bacononto appetizer picks.
Arrange on a serving plate and serve while still hot.
