Cheese Gougeres Filled with Extra Old Cheddar Whipped Cream

Ingredients

  • Cheese Gougeres
  • 1/2 cup (125 mL) water
  • 3 tbsp (45 mL) Canadian butter cut into cubes
  • 1 big pinch smoked paprika (optional)
  • 1/2 cup (125 mL) all-purpose flour
  • 2 eggs
  • 1/2 cup (125 mL) finely shredded Canadian extra-old Cheddar cheese reserving 1 tbsp (15 mL) for the top
  • Whipped Cream-Cheddar Mix
  • 2/3 cup (150 mL) Canadian 35% whipping cream
  • 1/2 cup (125 mL) finely shredded Canadian extra-old Cheddar cheese
  • 2 tbsp (30 mL) chopped fresh chives
  • Salt and black pepper

Preparation

Cheese Gourgeres

Preheat oven to 425°F (220°C). Line baking sheet with parchment paper; set aside.

In a medium, heavy- bottomed saucepan, combine water, Canadian butter and paprika (if using); bring to a boil over medium-high heat. Reduce heat to medium and add flour. With wooden spoon or heat-proof spatula, stir quickly and continuously until dough comes away from the sides of the pan, forms a ball and a film covers the bottom of the pot, about 1 to 2 minutes. Remove from heat.

With wooden spoon, beat in eggs, 1 at a time, stirring vigorously until incorporated and until dough is smooth, paste-like and shiny. Fold in cheese.

With two teaspoons, dipped in warm water, spoon onto prepared baking sheet at least 1-inch (2.5 cm) apart, to make about 12 to 14 gougeres. Top gougeres with reserved 1 tbsp (15 mL) of Canadian cheddar cheese.

Bake for 10 minutes. Reduce the temperature to 375°F (190°C) and bake 12 to 15 minutes or until puffed and golden. Let cool. Transfer to wire rack to cool completely.

Whipped Cream Cheddar Mix

In a chilled bowl, whip cream until soft peaks form. Fold in Canadian cheddar cheese, chives and salt and pepper, to taste.

To assemble, gently cut or break gougeres in half crosswise; add a dollop of Whipped Cream Cheddar Mix; put top on and enjoy!

Tips

For a variation, split gougeres and fill with Whipped Cream Cheddar Mix; roll in more shredded Cheddar cheese and chopped chives.

Use the side with the small holes on a box grater to shred the cheese.

Substitute Canadian Extra Old Cheddar with aged Canadian Gouda or Blue cheese.
