
Cheese Mousse on Graham-Cracker Cookies

Ingredients
- 1/4 cup (60 mL) 35 % cream
- 3 oz (100 g) Canadian Cream cheese softened
- 3 tbsp (45 mL) sugar
- Berry purée
- 2 oz (60 g) frozen berries
- 2 tsp (10 mg) icing sugar
- 1/4 tsp (1 mL) corn starch
- 10 Graham wafers

Preparation
In a big bowl, whip cream to soft peaks. In a separate big bowl, combine whipped cream, Cream cheese and sugar and beat with electric mixer until smooth.
In saucepan, combine berries, icing sugar and cornstarch and cook at medium heat until mixture thickens. Place Graham cookies side by side in shallow baking pan. Evenly spread cheese mousse on cookies and add berry puree on top. Refrigerate and serve.
