Chicken Breasts with Duo of Ham and Mustard Sauce

Ingredients
- 4 boneless chicken breasts
- 4 thin slices of prosciutto
- 4 thin slices of Black forest ham
- 4 thin slices of Canadian Miranda cheese
- 1 tbsp (15 mL) butter
- 1 tbsp (15 mL) olive oil
- 4 garlic cloves finely chopped
- 1/4 cup (60 mL) white wine
- 1 tbsp (15 mL) Dijon mustard
- 1 tbsp (15 mL) Meaux mustard
- 1/3 cup (80 mL) 35 % cream or 15 % or 18 % cream
- Salt and pepper to taste

Preparation
Preheat oven to 350 °F (180 °C).
Slit chicken breasts lengthways and open out; stuff with the two hams and Miranda cheese. Close each breast and secure with toothpicks.
In a skillet, melt the butter with the oil. Sauté the stuffed breasts for 2 minutes on each side over a high heat. Transfer to a baking tray lined with non-stick aluminium foil and cook in oven for 25 minutes.
Meanwhile, in the same pan, sauté the garlic for 3 minutes. Deglaze pan with white wine and whisk in the mustards. Add cream and whisk for a little longer. Reduce for 5 minutes over low heat. Season with salt and pepper.
Remove breasts from oven, slice thinly and pour over the hot sauce.
