Cottage Cheese Egg Salad

Have you ever thought of adding cottage cheese to your egg salad? The same delicious taste of egg salad, filled with crunchy vegetables and fresh herbs, but with a tasty dose of cheese! Enjoy as a side dish, in a sandwich or in a lettuce wrap!

Cottage Cheese Egg Salad

Ingredients

  • 8 hard-boiled eggs, roughly chopped
  • 3/4 cup (250g) Canadian cottage cheese
  • 1 medium carrot, finely diced
  • 1/4 red onion, finely diced
  • 1 stalk celery, finely diced
  • 1 tablespoon (15g) Dijon mustard
  • 1 tablespoon (10 g) lemon juice
  • 1 tablespoon (10 g) chopped chives
  • 2 tablespoons (10 g) chopped parsley
  • Salt and pepper to taste
  • 8 to 12 large Romaine lettuce leaves

Preparation

In a medium bowl, combine chopped hard-boiled eggs, cottage cheese, carrots, onion, celery, mustard, lemon juice, chives, parsley, salt and pepper. Stir gently until well incorporated.

Taste and adjust seasonings to taste.

Cover with plastic wrap and refrigerate until ready to serve.

To serve: Place two large romaine lettuce leaves on each plate and fill the leaves with the egg salad mixture!
