Creamy Cottage Cheese Pasta

If you’re looking for an easy, weeknight meal, this creamy tomato pasta with cottage cheese is perfect. What’s great about this recipe is how quick it is to make: cook the pasta, blend the cottage cheese and marinara sauce, and toss your cottage cheese sauce in with the warm pasta to heat it. That’s it!

Ingredients

  • 450 g of your favourite pasta
  • 1 1/2 cups (350 ml) store-bought marinara sauce
  • 1 1/2 cups (350 ml) Canadian cottage cheese
  • 3/4 cup (60 g) freshly grated Canadian hard cheese: Canadian Parmesan, Canadian aged cheddar, etc.
  • 30 g Canadian butter
  • 1/4 teaspoon (1 ml) dried chilli flakes
  • Salt and ground black pepper to taste
  • Fresh parsley for garnish (optional)

Preparation

Start by boiling salted water in a large saucepan to cook your pasta.

While the water is warming, prepare the sauce. In a blender, combine: cottage cheese, tomato sauce, freshly grated aged cheddar cheese and salt and pepper to taste.

Cook pasta for 8 to 12 minutes, depending on type of pasta and cooking time.

Take a ladleful of the cooking water from the pasta and add it to the blender. Blend until smooth.

Drain the pasta, then return it to the pot and add the butter to prevent sticking.

With burners off, pour in the sauce and stir until warm and evenly distributed, about 2 minutes.

Add a few chilli flakes and parsley for presentation (to taste). Serve and enjoy !
