- 2 potatoes
- 2 tbsp (30 mL) butter
- 1/2 cup (125 mL) hot 35 % cream
- 3/4 cup (180 mL) diced Canadian Aged Gouda
- Salt and pepper to taste

Peel and wash 2 potatoes. Boil in a saucepan until easily pierced with a fork 8 to 10 min. Drain and mash by hand or with an electric mixer. Add 2 tbsp (30 mL) butter and 1/2 cup (125 mL) hot cream.
Salt and pepper to taste, and add 3/4 cup (180 mL) diced aged Gouda. Stir until cheese is melted.
