Family Favourite Cheeseburger Soup

Ingredients

  • 1 lb (500 g) lean ground beef
  • ¼cup (60 mL) Canadian butter
  • ½ onion, chopped
  • ¾ cup (175 mL) shredded carrots 
  • ¾ cup (175 mL) diced celery
  • 1 tsp (5 mL) dried basil
  • ¼cup (60 mL) all-purpose flour
  • 3 cups (750 mL) chicken broth
  • 4 potatoes, peeled and diced 
  • 1 cup (250 mL) cubed Canadian cheddar cheese 
  • 1 ½ cups (375 mL) Canadian whole milk 
  • ¾ tsp (3 mL) salt
  • ¼tsp (1 mL) black pepper
  • ¼cup (60 mL) Canadian sour cream 
  • 1 green onion, thinly sliced

Preparation

In large saucepan or Dutch oven over medium heat, cook beef for 6 to 8 minutes or until starting to brown. Transfer to paper towel–lined plate.

Add butter to saucepan; stir until melted. Cook onion, carrots, celery and basil, stirring occasionally, for 6 to 8 minutes or until tender. Sprinkle in flour and cook for 1 minute.

Gradually stir in broth. Stir in potatoes and cooked beef. Bring to a boil, then reduce heat to a simmer. Cover and cook, stirring occasionally, for 10 to 12 minutes or until broth has thickened and potatoes are tender.

Stir in cheddar, milk, salt and pepper; cook for 2 to 3 minutes or until cheese is melted. Remove from heat. Stir in sour cream.

Ladle into bowls and garnish with green onion.
