Ingredients

  • 4 egg whites
  • 1 oz (30 g) sugar
  • A few drops of lemon juice
  • 2 cups (500 mL) Milk
  • 1 vanilla pod
  • Custard sauce
  • 5 oz (150 g) fresh strawberries washed and trimmed
  • 1 oz (30 g) roasted slivered almonds

Preparation

Whisk egg whites until they are fluffy and form peaks. Keep whisking while gradually adding sugar and lemon juice.

Bring milk to a boil with vanilla pod. As soon as the milk reaches boiling point, use two tablespoons to shape meringue mixture into ovals and place them in the milk. Gently turn meringues over to poach them completely on each side. Remove the meringues with a slotted spoon and set them on a paper towel.

Pour custard into four shallow bowls. Place meringues in the middle of each. Garnish with strawberries and almonds.
