Gajrela
In our family, food isn’t just about flavour—it’s about connection and tradition. This is one of my Mom’s favorites: Gajrela, a carrot dessert that’s always been a classic in our family.

Ingredients
- 4 cups (1kg) shredded carrots
- 1 cup (240g) Canadian powdered milk
- 1 cup (250 ml) Canadian whipping cream
- ½ cup (120 g) Canadian butter
- 3 cups (750 g) sugar
- Optional: almonds, raisins

Preparation
Prepare the Mixture: In a large mixing bowl, combine shredded carrots, milk powder, whipping cream, butter, and brown sugar. Mix well until all ingredients are evenly incorporated.
Cook on the Stove: Pour the mixture into a pot and place it over medium-high heat. Stir continuously to prevent sticking and cook until it begins to boil.
Simmer to Perfection: Once it starts boiling, reduce the heat to low. Let the mixture simmer, stirring occasionally, until it thickens to your desired consistency.
Optional Add-Ins: Stir in sliced almonds or raisins if desired for added texture and flavour.
Serve and Enjoy: Spoon the gajrala into bowls and serve warm. It’s perfect as a dessert or a cozy mid-day treat.
