Ingredients
- 2 cups (500 mL) baby spinach
- 4 panini, ciabatta or small baguette loaves
- 1/3 cup (80 mL) coarsely chopped walnuts or pecans
- 1 unpeeled pear thinly sliced
- 12 1/2 oz (375 g) Canadian Brie sliced

Preparation
Preheat barbecue to medium-high.
Place spinach in a microwave-safe dish with 2 tbsp (30 mL) water. Cover and cook 2 minutes on high. Drain and set aside.
Open bread and evenly divide ingredients among sandwiches, layering them. Close sandwiches. Quickly grill on barbecue, flattening sandwiches with a frying pan or spatula.
Serve immediately with a tossed salad drizzled with Italian dressing.
Tips
Alternative: This sandwich is just as delicious with raw spinach.
The sandwiches can be prepared ahead of time without grilling. The pears, however, should only be added just prior to serving to ensure they do not turn black.
For a change of taste, try with Canadian Swiss, Camembert or Cheddar, etc.
