This is the Grilled Portobello with Canadian Brie recipe.

- 4 portobello mushrooms
- 2 tbsp (30 mL) melted butter
- 2 tbsp (30 mL) balsamic vinegar
- 3 cloves garlic, chopped
- Salt and freshly ground pepper
- 6 oz (180 g) Canadian Brie sliced
- 1 cup (250 mL) baby arugula
- Balsamic vinegar, to taste
Preheat oven to 450oF (230oC) or barbecue to medium-high heat.
Remove stems from mushrooms and reserve for another use.
In a bowl, mix melted butter with balsamic vinegar and garlic. Add mushroom caps, season, and toss to coat well.
Place mushrooms hollow side down in an ovenproof dish, or on the grill, and cook 3 to 5 minutes. Turn and place cheese slices inside mushrooms and continue cooking 2 to 3 minutes.
Serve garnished with arugula and a few drops of balsamic vinegar.
Note: Can be prepared with small mushrooms for an appetizer.
