Italian Christmas Pudding (Pudding natalizio)

Ingredients
- 2 2/3 cups (660 mL) Milk
- 1 cup (250 mL) sugar
- 1 cup (250 mL) brown sugar
- 14 oz (420 g) semolina
- 1/2 tsp (2 mL) vanilla extract
- 14 oz (420 g) sultana raisins
- 3/4 cup (180 mL) pine nuts
- 1/4 cup (60 mL) candied fruits

Preparation
Pour milk in saucepan and add sugar and brown sugar. Cook over medium heat while stirring and bring to boil. Immediately sprinkle with semolina while stirring. Let boil over low heat while stirring, and cook until mixture thickens. Stir in a touch of vanilla, raisins, pine nuts and candied fruits.
Pour mixture into 2 4 cups (1 L), or larger, lightly buttered decorative moulds and refrigerate for a few hours. Remove from mould and serve.
