Kiwi Pork Rolls

Ingredients
- 3 pork tenderloins trimmed of fat
- Salt and pepper to taste
- 4 kiwis peeled and mashed
- 1 1/2 cups (375 mL) grated Canadian Canadian-Swiss cheese
- 2 tbsp (30 mL) butter

Preparation
Cut each pork tenderloin in 4 thick slices. Cover slices with wax paper and pound lightly with meat mallet or a cast-iron pan until slices are 3-inch (7.5 cm) wide. Season to taste with salt and pepper.
Spread each pork slice with kiwi purée and sprinkle with Canadian Canadian-Swiss cheese. Roll up pork slices and secure with toothpicks or thin string. In skillet, cook pork rolls in butter for 4 to 5 minutes on each side. Serve two rolls per person with a green salad and wild rice.
