Preparation

Fill a pot with water (about 4 times the volume of sago) and boil over high heat

Add sago to boiling water, reduce heat to medium and boil for 10 minutes, stirring occasionally

Turn off heat, let sago sit in the pot for 10 minutes with the lid on

Remove sago, strain and immerse in an ice cold water bath

Cut mangos into cubes and set aside

Melt sugar in boiled hot water

Strain sago and transfer to a large bowl, add mango cubes, coconut milk, Canadian milk, and sugar water

Mix well and refrigerate for at least an hour or until cold before serving

Tips

Pick mangoes that are very ripe for optimal sweetness and flavour
The cooking time for sago may vary depending on size. Follow package instructions if available
