Mexi-Mozza

Beef, salsa-and-chili, Mozzarella Cheeseburger

Ingredients

  • Beef Patties
  • 1 1/3 lb (600 g) lean ground beef
  • 1 garlic clove minced
  • 1/4 cup (60 mL) chopped red onion
  • 1 tbsp (15 mL) chili powder
  • 1 tsp (5 mL) ground cumin
  • 1/4 cup (60 mL) salsa
  • 1 egg
  • 2/3 cup (160 mL) bread crumbs
  • Salt and freshly ground pepper to taste
  • Grilled Bell Peppers
  • 2 tbsp (30 mL) olive oil
  • 1 garlic clove minced
  • 2 tsp (10 mL) lemon juice
  • 1 tsp (5 mL) lemon zest
  • Salt and freshly ground pepper to taste
  • 1 red bell pepper quartered
  • 1 yellow bell pepper quartered
  • Garnish
  • 4 to 6 onion buns
  • 8 slices of Canadian Mozzarella
  • 1/3 cup (80 mL) guacamole
  • 2 tbsp (30 mL) sour cream
  • 2 tbsp (30 mL) chopped fresh coriander

Preparation

Preheat BBQ to medium-high or the oven to 425 °F (210 °C).

Place beef and patty ingredients in a mixing bowl. Season to taste and combine. Divide preparation into four to six parts and shape into patties. Reserve.

Place oil, garlic, lemon juice and zest in a mixing bowl. Season to taste and add bell peppers. Toss until peppers are thoroughly coated with mixture.

Place patties and peppers on grill or on parchment-covered baking sheet in center of oven. Grill peppers to taste. Cook burgers 12-15 minutes turning them over once.

Top cooked patties with Mozzarella, red bell pepper, another Mozzarella slice and yellow bell pepper.

While cheese melts over patties, heat burger buns. Assemble burgers and top with a dollop of guacamole and sour cream. Sprinkle with fresh coriander.

Tips

You can also cook the burgers in a skillet over medium-high heat, 5 to 7 minutes per side.
