Milk Pudding with Shredded Coconut

Get a taste of summer with this easy and fun dessert! Using just four ingredients, impress your guests with a refreshing treat that'll have them coming back for more.

  • 2 cups (500 ml) Canadian milk
  • 1/4 cup (50 g) sugar
  • 1/2 cup (50 g) cornstarch
  • 1 cup (250 g) sweetened shredded coconut

Pour half the milk (1 cup / 250 ml) into a non-stick pan and add the sugar. Mix well.

Pour remaining milk into a bowl and add cornstarch, whisking until smooth.

Place the saucepan containing the sugar and milk on the heat and set to medium-low. Cook over medium-low heat for 3 to 4 minutes, or until the milk is hot. Do not bring the milk to a simmer.

Slowly pour the milk and cornstarch mixture into the warm milk. Keep whisking until the mixture reaches a thick consistency, about 5 minutes.

Line a container with parchment paper or plastic wrap and pour in the mixture. Refrigerate for approx. 1-2 hours, or until completely cool.

Cut into small cubes, top with shredded coconut and enjoy!
