Old Fashioned Cheesecake

Ingredients
- Crust
- 1 1/2 cup (375 mL) graham cracker crumbs
- 1/4 tsp (1 mL) ground cinnamon
- 1/4 cup (60 mL) butter melted
- Filling
- 1 1/2 lb (750 g) Canadian Cream cheese
- 1 cup (250 mL) sugar
- 3 eggs
- 1 tsp (5 mL) vanilla extract
- 1/2 cup (125 mL) sour cream
- Topping
- 1 cup (250 mL) sour cream
- 3 tbsp (45 mL) sugar
- 1 tsp (5 mL) vanilla extract

Preparation
Combine graham cracker crumbs with cinnamon and butter. Press into the bottom of a 9-inch (23 cm) springform pan.
For the filling, beat Cream cheese with sugar. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and sour cream. Pour over crust.
Bake in a preheated 350 °F (180 °C) oven for 45 to 50 min or until just set when gently shaken.
Combine sour cream with sugar and vanilla extract. Spread over hot cheesecake. Bake 5 min longer. Chill thoroughly before serving.
Tips
To cut this cake easily, dip knife into very hot water and wipe dry before slicing.
