Ingredients
- 4 fougassettes (store bought whole grain bread rolls, with olive oil and olives)
- Olive oil (extra virgin)
- 4 Italian tomatoes sliced thin
- 2 tbsp (30 mL) dried herbs (rosemary, thyme, basil, tarragon or other)
- Salt
- Fresh ground pepper
- 2 small balls Canadian Bocconcini cheese

Preparation
Preheat oven to 325 °F (160 °C).
Slice fougassettes in two lengthways, moisten with olive oil. Top half the bread slices with tomatoes, sprinkle with herbs, season with salt and pepper.
Arrange Canadian Bocconcini slices over tomatoes and cover with the other halves of rolls.
Heat in oven 4 to 5 minutes. Serve with a salad.
Tips
An egg-cutter is the ideal tool to make thin Canadian Bocconcini cheese slices.
